Boil sugar and water until a boil, add the prepared mango pulp, and cook for 4 to 5 minutes, and the aam panna concentrate is ready. Cool it and store it in an air-tight bottle. For a long shelf life, store it in a fridge. Prepare the aam panna drink in just one minute with the prepared concentrate any time of the day.

  • ½ tsp Roasted Cumin Powder

  • 1 tsp Fennel Powder 
  • Half Lemon Juice 
  • 225 grams Sugar
  • 1 cup Water

Assemble Sharbat

  • 1 tsp Black Salt
  • 1 tsp Red Chili Powder
  • Fresh Mint Leaves
  • 2 – 3 tbsp Syrup
  • Chilled Water

    Tip*- Choose less sour (tangy) mangoes.
  • Place the mangoes in a cooker. Add 1½ cups, or 400 ml of water, and ¼ tsp of salt, and cook them until two whistles.
  • Once the steam is released naturally, open the cooker and transfer the cooked mangoes to a bowl.
  • Once they cool down, scrap the mango pulp.
  • Transfer the pulp to a mixer jar. Add one green chili, ½ inch ginger, 1 tsp black salt, ½ tsp salt, ½ tsp roasted cumin powder, ¼ tsp of pepper powder, 1 tsp of fennel powder, and some mint leaves (optional).
  • Blend it into a smooth paste and keep it aside.
  • Add 225 grams of sugar and one cup of water into a thick bottom pan. The ratio of mangoes to sugar is 2:1.
  • Stir until the sugar dissolves in the water.
  • Once it reaches the boiling point, add the juice of half a lemon.
  • Add the prepared mango paste to the syrup. You can strain it or add it directly.
  • Mix all the ingredients well. Use a whisk if required to remove the lumps.
  • Boil the mixture for 4 to 5 minutes or until the mixture thickens.
  • The syrup should be sticky and thick. No string consistency is required. For your reference, boil till one string consistency.
    Tip* – One-string consistency check – When you pull apart your forefinger and thumb, a single thread or the line is formed and does not break.
  • Cool the syrup and store it in an air-tight container.
    Tip*- The syrup will slightly thicken on cooling.

Assemble Sharbat

  • Add one tsp of black salt and 1 tsp of chili powder to a plate and mix it well.
  • Move a piece of lemon around the edges of the glass.
  • Hold the glass downwards and move it around so the mixture sticks to the glass.
  • Add ice cubes, fresh mint leaves, and 2 to 3 tbsp of prepared syrup into the glass.
  • Add chilled water and give it a good stir.
  • Garnish it with a sliced lemon and mint leaf. Enjoy chilled.
