Today, we’re going to teach you how to make vrat ka khana Farali Aloo sabji is a fasting recipe with potatoes that is prepared during the festival season like Shivratri or Navaratri. As salt is not permitted, rock salt or sendha namak is used in preparing Navratri food recipes. Potato is the common vegetable that can be eaten during Navratri but some people also consume tomatoes during fasting.
During fasting, in spices, only black pepper is allowed, but, you can also add green chili, ginger, fresh coriander to enhance the taste. If you want a little tangy flavor, lemon juice can be added as well. Vrat ke aloo can be prepared dry or in gravy form. Farali Aloo Ki Sabzi goes well with Rajgira paratha or Rajgire ki poor, Kuttu ki poori or Kuttu roti or Samo rice Khichdi accompanied by curd.

Ingredients
- 2 Potato (cut in cubes) Medium size
- 2 tbsp Oil
- 1 tsp Cumin seeds
- 2 Green Chilies chopped
- ½ inch Ginger chopped
- few Curry Leaves
- ¼ tsp Black pepper powder
- Sendha Namak or Rock Salt as per taste
- 1 cup Water
- few Fresh Coriander
Instructions
- Add oil in a Kadai. Once the oil is hot, add cumin seeds and saute for a minute
- Then add green chilies, ginger, curry leaves and saute them for a minute
- Add some boiled potatoes and leave some for later use. Add sendha namak or rock salt, black pepper powder and mix well
- Add water, and mix well. Allow the water to boil
- Then mash and add the remaining potato and coriander leaves. This will thicken the gravy
- Cook for five minutes and the sabzi is ready
- Serve hot with Samu rice or Rajgira paratha
Notes
- This is a semi-dry aloo sabzi for fasting which can be enjoyed with Samo rice or Rajgira paratha
- You can adjust the gravy consistency as per requirement
- Some people eat tomato while fasting but I have not added as we don’t eat
- For a tangy taste, you can add ½ tbsp pomegranate seeds along with the potatoes
