I have previously made Rose Gulkand Ladoo which was a hit, and then I thought about where else can be gulkand blended in well.

It was very random, but I was making rose syrup ice cream one day, and one of my family members suggested adding gulkand to enhance the taste. So, I tested it a bit, and the current recipe is perfect!

We make this gulkand ice cream recipe without an ice cream maker. The ice cream recipe is simple, and the process lesser than 15 minutes. You can make the recipe with an ice maker if required. I prefer not to use it because it works perfectly fine without it.

This gulkand ice cream recipe is an ice-crystal-free ice cream recipe. There is a technique to have no crystals in ice cream. Once you have the mixture whisked, freeze for a couple of hours till light crystals form over the mixture. Then you bring the ice cream from the refrigerator and whisk it again. Once done, pour the whisked mixture into the container and freeze it until the ice cream is ready. In this way, your ice cream will never have ice crystals.

  • ½ cup Heavy whipping Cream chilled
  • 1 cup Full Cream Milk
  • ½ cup Milk Powder
  • ½ cup Powdered Sugar
  • 2 tbsp Condensed Milk / Milkmaid 
  • 2 tbsp Gulkand / Rose petal Jam
  • 2 tbsp Rose Syrup
  • 1 tsp Rose Emulsion
  • Cashewnuts,Pistachios and dry rose petals Garnish

Instructions

  • Add chilled heavy whipping cream to a chilled bowl
  • With an electric or hand beater, whip the cream until soft peaks.
  • Add milk, milk powder, powdered sugar, condensed milk or milkmaid, Gulkand or rose petal jam, and rose syrup.
  • With an electric or hand beater, mix all the ingredients well.
  • Pour this mixture into an air-tight container. Cover with a cling flame and freeze for 2 to 3 hours.
  • Take out the ice cream container after 2 to 3 hours. Pour the ice cream into a bowl.
  • Add rose emulsion essence.
  • With an electric or hand beater, beat the mixture until all the ice crystals have broken into small particles. 
  • Pour this mixture into an air-tight container. Garnish with almonds and pistachios
  • Cover with a cling flame and freeze for 4 to 5 hours or overnight
  • The ice cream should be ready. Take it out and scoop it.
  • Garnish with almonds, pistachios and serve. Enjoy the ice cream

  1. Ensure both the bowl and the cream are chilled well. 
  2. Set the freezer temperature to high, and later place the ice cream to freeze. 
  3. Fresh cream also works well for this recipe. 
  4. Cream with a fat content of 34% or above gives good texture and creaminess to the ice cream.
  5. Full-fat or Full cream milk gives the best results. Amul Gold extra cream or Amul gold. Both work for this recipe. Suggest you use the Amul gold tetra packet and not the one you get in the milk bag.
  6. The shelf life of the ice cream is three months.
