The pani puri water varies by region in India, with each region adding its twist to create a unique experience. In Maharashtra, the pani puri pani (water) is more spicy, with a strong presence of garlic and chili. Meanwhile, in Bengal (known as puchka water), the water is tangier and slightly sweeter.

The essence of pani lies in its complexity. The main base of this pani is fresh coriander(cilantro), mint leaves, green chilies, and ginger. To this, a blend of spices – roasted cumin, black salt, sea salt, chaat masala, and pepper powder is incorporated, each bringing its unique note to the symphony of flavors. Tamarind, lemon juice, and jaggery are the key players in this orchestra that provide the necessary tanginess and sweetness. These ingredients, when combined, create a harmony that is both bold and refreshing. To make this pani more tangy and flavorful, as we say in Hindi chatpati, I always add a jal jeera powder packet readily available in the market.
