I miss the old days of heading down to the street of Mumbai after having dinner and enjoying a refreshing pan from the street vendor near my place. So in this recipe, I have made a paan milkshake; topped with the classic falooda ingredients like sabja seeds, falooda sev, rabri, and rose syrup. I have added paan kulfi and homemade Gulkand ice cream on the top. Gulkand is a rose petals jam and also a natural coolant during summer. When you have this Paan Kulfi falooda, you will feel like having Meetha paan, as this recipe has Gulkand and Paan together.

Ingredients

Milk Shake Preparation

  • 1 cup Milk
  • 2 tbsp Paan syrup
  • ½ tbsp Rose petal jam / Gulkand
  • pinch Green Color

Soaking Seeds

  • 1 tbsp Sabja seeds
  • ½ cup Water

Assemble

  • Few Ice cubes
  • 1 tbsp Sabja seeds soaked
  • 2 tbsp Rabri
  • 1 tbsp Rose syrup
  • 1 to 2 tbsp Falooda sev boiled
  • 5 to 6 pieces Paan Kulfi
  • 1 scoop Gulkand ice cream
  • Cashew nuts and pistachios Garnish

Instructions

Milk Shake Preparation

  • In a glass, add 1 cup milk, 2 tbsp paan syrup, ½ tbsp gulkand or rose petal jam, and a pinch of green color. Mix it well.
  • Keep it aside.

Soaking Seeds

  • In a mixing bowl, add 1 tbsp sabja seeds. Add ½ cup of water and mix well. Rest for 5 minutes.
  • Soak for 5 minutes.

Assemble

  • In a serving glass, add a few cubes of ice.
  • Add 1 tbsp soaked sabja seeds.
  • Add 1 to 2 tbsp falooda sev or seviyan.
  • Add ½ tbsp rose syrup.
  • Add 1 tbsp rabri.
  • Add the prepared paan milkshake.
  • Add 1 tbsp rabri.
  • Add 5 to 6 pieces of paan kulfi.
  • Add a scoop of gulkand ice cream.
