Festival seasons have begun, and you can make this Peanut cashew barfi on special occasions like DiwaliKarva Chauth, or any time of the year. So, I thought, let me share a two-layer peanut cashew kesar barfi—a perfect dessert to enjoy after everyday meals.

This Peanut Cashew Kesar Barfi is a simple and quick barfi recipe made in just half an hour. Peeling the peanut skin off in this recipe is only a tedious and slightly time-consuming task. You may use skinless peanuts.

In this recipe, I have used both peanuts and cashew nuts. Cashew nuts enhance the taste making it tastier and delicious. You can make this barfi with peanuts too. You may find the recipe for the Peanut barfi on my website.

You will need peanuts, cashew nuts, saffron, milk powder, sugar, and ghee to make this barfi.

Here are a few tips to make a perfect peanut barfi –

  1. The sugar syrup should be of a one-string consistency.
  2. As the barfi leaves the sides of the pan, you can switch off the gas flame immediately. Please don’t overcook the mixture; the barfi will turn hard after cooling.
  3. Once you switch off the gas flame, mix the barfi with a spatula in the pan for a few seconds. This way, the peanuts will release the natural oil that will give an excellent shine to the barfi.
  4. I have made kesar flavor barfi; you can skip it and make plain peanut cashew barfi, which tastes delicious too. This peanut barfi recipe is versatile; the choice of essence or color can be added per preference.
