Here are a few tips to make a perfect peanut barfi –
- The sugar syrup should be of a one-string consistency.
- As the barfi leaves the sides of the pan, you can switch off the gas flame immediately. Please don’t overcook the mixture; the barfi will turn hard after cooling.
- Once you switch off the gas flame, mix the barfi with a spatula in the pan for a few seconds. This way, the peanuts will release the natural oil that will give an excellent shine to the barfi.

Diwali, Navratri Sweets -Peanut Cashew Kesar Barfi(Updated)
Ingredients
- 250 grams or 2 cups Peanuts
- 150 grams or 1 cup Sugar
- 50 grams or ½ cup Cashew Nuts
- ½ tsp Cardamom powder
- 2 tbsp Milk Powder
- ¼ cup Water
- Saffron Little
- 1½ tbsp Ghee
Instructions
- Take 250 grams or 2 cups of peanuts in a pan. Roast for 5 to 7 minutes on a low flame until the skin of the peanuts peels off easily.
- The skin peels off easily. Switch off the gas.
- Transfer to a plate and let it cool slightly. Peel off the peanuts with the help of your fingers or roll some peanuts between your palm.
- Transfer the peanuts to a grinding jar and add 50 grams or ½ cup of cashew nuts. Grind it in pulse mode.
- The mixture should be slightly coarse. Transfer into a mixing bowl and keep aside.
- Add 150 grams or 1 cup of sugar and ¼ cup of water to a pan. Stir and cook till one string consistency is formed. Switch off the gas flame.
- Stir and add the ground peanut cashew mixture in batches. Switch on the gas flame.
- On a low flame, stir and cook till the mixture combines well. Add 2 tbsp milk powder.
- Stir and cook till the mixture thickens.
- Add ½ tsp of cardamom powder and 1 tbsp of ghee. Mix all the ingredients well and cook till the mixture leaves the sides of the pan.
- Add ½ tsp ghee and mix all the ingredients well. Take one-fourth of the mixture into the bowl and keep it aside.
- Add some saffron to the remaining mixture and mix all the ingredients well.
- Transfer the mixture to a greased tray and spread it evenly.
- Spread the white barfi mixture evenly kept aside over the saffron mixture and let the barfi cool completely.
- Once the barfi is set for 2 to 3 hours, trim the edges, apply silver vark, and cut into pieces.
- Place sliced pistachios, and decorate each piece with saffron.
