Equipment

  • heavy bottom Kadai or Non stick pan

Ingredients

  • 1 cup Ghee
  • 1 cup Rajgiri Flour
  • 1 cup Sugar 
  • 2 cup Water
  • 1 tsp Cardamom powder  
  • Almonds, pistachios Garnish

Instructions

  • In a heavy bottom pan or a Kadai, add 1 cup of ghee. Ensure that you heat the pan on a low flame.
  • Once the ghee is hot, add 1 cup Rajgira atta, and mix well.
  • Keep stirring and roast till the mixture turns brown in color.
  • The mixture will release ghee when roasted properly.
  • Stir and gradually keep adding 2 cups of water. Don't add all the water in one go else the mixture will split out.
  • Ensure there are no lumps in the mixture.
  • Once the water is absorbed, add 1 cup of sugar
  • Keep stirring till the sugar is completely dissolved
  • Now add cardamom powder, some nuts, and mix it well
  • Garnish it with some more nuts
  • Serve hot

Notes

  1. Always roast on a low flame 
  2. Keep stirring while roasting the mixture to ensure it roasts evenly from all the sides
  3. Don’t add all the water at one time instead keep stirring and gradually keep adding water
  4. You can adjust the quantity and choice of the nuts as per your requirement and taste
