Murmura or Kurmura is the Hindi name for puffed rice, rich in fiber and high protein. Murmura is used in many dishes and is the most common ingredient in the famous street food - Bhel Puri of India. Bhelpuri is a wet snack to enjoy in the evening if you are light hungry. Bhelpuri is simple to make - add some onions, tomatoes, spices - chaat masala, red chili powder, and a good amount of green and sweet tamarind chutney - mix it with murmura (puffed rice), add a touch of lemon juice topped with some sev (noodles) and fresh coriander. Murmura bhel is a quick delicious Indian snack.You can roast the murmura with little oil on a low flame and add turmeric, red chili powder, and salt. Fried peanuts followed by tadka of mustard seeds, curry leaves, and some slit green chilies also can be added as per the taste. This dry snack is light to eat and enjoyed at any time.Nowadays, everyone is health conscious, and after covid 19, we all need to take more care of our health and boost our immunity system. Today, at Indi Kitchen, we share a snack recipe - the Murmura Paneer cutlet recipe, a simple and quick snack to make. In the murmura paneer recipe, we have not used potato nor maida for binding; instead, we have used paneer, spinach, mint leaves, oats powder, few spices. To make these cutlets crispy, we added cornflakes powder, dipped them in oats slurry, and rolled them in cornflakes powder. Then these cutlets are fried in olive oil. You can shallow fry them too.This murmura paneer cutlet is packed with vitamins, minerals, and iron. Paneer is rich in protein and fat, a good source of iron and calcium. Spinach is rich in vitamins A and C, a good source of iron and magnesium. Leafy vegetables are always good for health. Spinach is good for the eyes and weight loss and reduces blood sugar. 2cupsPuffed rice
150gramsPaneer
1onionchopped
½cupSpinach finely chopped
a handful of mint leaveschopped
Fresh Coriander
2Green chilies
1 tbspGinger paste
1tspChat Masala
1 tspRock Salt
pinchTurmeric Powder
½tbspCoriander Powder
1tspRed Chilli Powder
1tspGaram masala
2tbspLemon Juice
Salt as per taste
4tbspOats Powder
2tbspCorn flakes Powder
Oil for frying
¼ cupCorn flakesfor coating
Slurry Preparation
1½tbspOats powder
pinch Salt
pinchBlack pepper powder
Instructions
Take 2 cups of puffed rice in a mixing bowl and soak them in sufficient water.
Ensure the rice is soaked well in water. Soak for 3 to 4 minutes.
Drain the water.
The rice should be soft. Slightly mash it with your hands.
Add 150 grams of grated paneer, one chopped onion, ½ cup chopped spinach, a handful of chopped mint leaves, and some fresh coriander.
Add two chopped green chilies, 1 tbsp ginger paste, 1 tsp chaat masala, 1 tsp rock salt, a pinch of turmeric powder, ½ tbsp coriander powder, 1 tsp red chili powder, 1 tsp garam masala, salt as per taste, 2 tbsp lemon juice.
Add 4 tbsp oats powder and 2 tbsp cornflakes powder.
Gently mix all the ingredients well.
With greased hands, take some mixture and roll it between your hands to form a ball.
Gently press and flatten it.
Roll and give a round tikki shape and keep aside.
Add 1½ tbsp oats powder, a pinch of salt, and black pepper powder to a bowl.
Add water in batches and prepare a smooth lump free slurry.
Take ¼ cup of cornflakes, grind them, and keep them aside.
Dip the prepared cutlet in the slurry and take it out with a fork.
Coat the cutlets with the cornflakes powder.
Gently drop them in medium hot oil. Allow them to fry for a few minutes.
Flip to the other side and fry till golden.
Drain and transfer them to the kitchen towel to remove the excess oil.
Sprinkle some chaat masala on the cutlets and enjoy with mint chutney.
