Eggless Tutti Frutti Cookies, Karachi Biscuits(Updated)
Tutti frutti is a sweet and colorful fruit candy made of papaya in India. Some also prepare tutti frutti from watermelon, commonly used for baking products like cakes, muffins, biscuits, cookies, and desserts like ice creams and mithai. Kids love to eat this fruit candy all day!We always like to eat biscuits and cookies with tea. Kids and elders love to dip the biscuits in tea and have it. Whenever I think of Tutti Frutti, it reminds me of Karachi Bakery in Hyderabad, Telangana. Their egg-free high-quality cookies ooze with flavor, and they are still one of my favorite biscuits with chai. So, I thought of sharing this Eggless Tutti Frutti Cookies recipe with you guys, and I am sure you all will love it! These cookies, made of white flour, margarine, powdered sugar, milk powder, orange essence, and pineapple essence, are flavorful, inviting, and delicious, and you will relish every bite. To add a delightful crunch, we incorporate cashew nuts and a generous quantity of tutti frutti in these cookies. The key ingredient in these cookies is the custard powder, which imparts a delightful flavor and contributes to the crunchy texture. Ingredients
150 grams White Flour
100grams Margarine
75 grams or ½ cup Powdered Sugar / Icing Sugar
25 grams or ¼ cup Milk Powder
30 gramsor ¼ cup Custard Powder
30 gramsor ¼ cupTutti Frutti
40 gramsor ½ cup Cashew Nuts
¼tsp Baking Powder
½tsp Orange Essence
½tsp Pineapple Essence
2tbsp Water
Instructions
Add 100 grams of margarine and 75 grams of icing or powdered sugar in a mixing bowl.
Beat margarine and icing sugar with an electric beater until the mixture turns pale yellow, light, and fluffy.
Add 2 tbsp of water, ½ tsp of orange essence, ½ tsp of pineapple essence. Beat it well.
Sift 150 grams of white flour.
Add 25 grams of milk powder, 30 grams of custard powder, and ¼ tsp of baking powder.
Gently beat until all the ingredients combine well. Don't overbeat the mixture.
With a spatula, scrape the mixture from the electric beater.
Add 40 grams of cashew nuts and 30 grams of tutti frutti.
Gently knead a dough.
Divide the dough into two parts. Take one portion and roll it into a smooth dough.
Sprinkle some flour on the board and place the dough.
Roll out into a ½ inch thickness.
Top up with some tutti frutti and roll it with a rolling pin.
Cut them into the desired shapes.
Place the cookies in a baking tray and bake at 160 degrees for 15 to 20 minutes.
Let the cookies cool completely.
Enjoy them with tea or coffee.
Notes
I have used margarine in this recipe, but butter also works fine for these cookies.
If using butter, Keep the dough in the fridge for 30 minutes.
Preheat the oven to 160 degrees for 5 to 7 minutes.
Bake in the middle rack with both rods ON.
If the cookie lifts smoothly with the spatula without sticking to the tray, the cookies have baked well.
You can check step 3 before or after taking them out of the oven. You can always place them back into the oven for baking.
Initially, the cookies will be softer in texture, but after cooling will turn hard and crispy.
For accurate results, please follow the measurements in grams and not measuring cups.
