heavy bottom Kadai or Non stick pan
Ingredients
1cupGhee
1cup Rajgiri Flour
1cup Sugar
2 cup Water
1tsp Cardamom powder
Almonds, pistachiosGarnish
Instructions
In a heavy bottom pan or a Kadai, add 1 cup of ghee. Ensure that you heat the pan on a low flame.
Once the ghee is hot, add 1 cup Rajgira atta, and mix well.
Keep stirring and roast till the mixture turns brown.
When roasted properly, the mixture will release the clarified butter(Ghee).
Stir and gradually keep adding 2 cups of water. Don't add all the water in one go; the mixture is hot and will split over the gas flame.
Ensure there are no lumps in the mixture.
Once the water is absorbed, add 1 cup of sugar.
Keep stirring till the sugar dissolves completely.
Now add cardamom powder and some nuts, and mix it well.
Garnish it with some more nuts.
Serve hot
Notes
Always roast on a low flame.
Keep stirring while roasting the mixture to ensure it roasts evenly from all sides.
Don't add all the water at once; keep stirring and gradually add water.
You can adjust the quantity and choice of nuts as your requirement and taste.
