12piece Cashew Nuts
400 gramsGrated Carrot
2cupsFull Fat Milk
2tbspFresh cream
1tspCardamom powder
Saffron few strings soaked in milk
pinch Nutmeg
80grams Sugar
Instructions
Add 2 tbsp ghee to a pan. Let the ghee heat up. Add 12 pieces of cashew nuts and roast for a minute or until golden.
Drain and keep them aside.
In the same pan, add 400 grams of grated carrot. Roast the carrot for 10 minutes on a low flame.
Add 2 cups of milk or ½ litre full-fat milk.
Stir occasionally and cook on a low flame till ¾ of the milk is reduced.
Add 2 tbsp of fresh cream. Stir and cook till the milk is absorbed by the carrots.
Add 1 tsp cardamom powder, saffron (a few strings soaked in milk), and a pinch of nutmeg.
Add 80 grams of sugar. On a low flame, cook until sugar and milk are well combined.
Add 1 tbsp of ghee and cook for a few minutes.
Add fried cashew nuts, and mix them well in the mixture.
Carrot halwa is ready. Enjoy it hot with a scoop of vanilla ice cream.
