Ingredients
1cupMoong Dal
3½cupsWheat Flour
1tspCumin Seeds
¼tsp Asafoetida
¼tspTurmeric Powder
¾tbsp Coriander Powder
½tbsp Red Chilli Powder
¼tsp Mango Powder
¼tsp Garam Masala
Salt as per taste
1tbsp + tspOil (तेल)
1tbsp Green Chili Paste
1tbsp Ginger Paste

Instructions
Take 1 cup of moong dal and soak it for 30 minutes.
Cook the dal and remove the foam from the dal. Each grain should be separate from each other and not mushy.
Strain the dal and keep it aside.
Add 1 tbsp of oil to a pan and let the oil heat. Add 1 tsp of cumin seeds, ¼ tsp of asafoetida, 1 tbsp of green chili paste, and 1 tbsp of ginger paste. Saute for a few seconds.
Add the cooked dal, ¼ tsp of turmeric powder, ¾ tbsp of coriander powder, ½ tbsp of red chili powder, ¼ tsp of mango powder, and salt as per taste. Mix all the ingredients well.
Add ¼ tsp of garam masala and some fresh coriander leaves. Mix all the ingredients well.
Cook for a minute. Keep it aside and cool the mixture.
Add 3½ cups of wheat flour to a pan, salt as per taste, and mix all the ingredients well.
Add water and knead a semi-soft dough. Add 1 tsp oil and knead the dough well until smooth. Rest the dough for 5 minutes.
Take a portion of the dough and form a ball.
Dust some flour and roll it into a small chapati.
Apply some ghee.
Place the chapati on your palm, and add 2 tbsp of prepared moong dal mixture.
Bring the edges of the dough together in the center and seal it. Fold the extra dough down in the center or can remove it.
Gently slightly flatten the dough with your fingers.
Dust some flour and roll it into a medium-thick chapati.
Place the paratha on a hot tawa. Flip to the other side after one minute or once the base is cooked.
Flip, press, and cook evenly on both sides on a medium flame.
