Quick Leftover Recipe -Dahi Ke Rice Pakora(Updated)
Rice Pakora or Chawal Pakora is a deep-fried snack made from cooked rice or leftover rice, gram flour, Dahi or yogurt, herbs, and spices. Very simple and easy to make this delicious snack. Unique Rice Pakora Recipe; rice and curd or yogurt are mixed and kept aside for a few hours or at least 30 minutes. The flavor of yogurt or curd blends well with rice, giving a slightly sour taste. I added green chilies, ginger, a good amount of fresh coriander, salt, and gram flour and fried. In this leftover rice recipe, sour curd is an excellent option over fresh curd or yogurt; there is no need to rest the batter. Mix all the other ingredients, and you can fry the pakora immediately. You can always add onions or veggies of your choice, but trust me; these chawal pakoras taste fantastic without them. You can also make them instantly if you do not like the sour flavor of the pakoras. They are crunchy from the outside and soft like pillows from the inside. They are so good that you won't know they are made from cooked rice. I always make them at home whenever I have leftover cooked rice. This snack is an excellent option for using the leftover rice and not throwing them.

Ingredients
3cupsCooked rice
1cupYogurt or Dahi
1cupGram flour
3 - 4Green ChiliesĀ chopped
1inchGingerĀ finely chopped or grated
Fresh coriander
Salt as per taste
Instructions
In a mixing bowl, take 3 cups of cooked rice. Gradually add 1 cup of yogurt or Dahi and mix both ingredients well.
Cover and rest for 30 minutes.
Add 3 to 4 chopped green chilies, 1 inch of chopped ginger, salt as per taste, and a good amount of fresh coriander.
Take one cup of gram flour, gradually add it, and mix it well.Tip* - The required gram flour will depend on the moisture content in the yogurt or Dahi.
You can take some mixture in your hand; it is perfect for frying if it binds together easily. Else add some more gram flour.
2 to 3 tbsp of gram flour is left unused.
Dip your fingers in a bowl of water.
Take some mixture with your fingers.
Drop the mixture(small lemon size balls) to medium-hot oil. The mixture is frying perfectly in the oil; the batter consistency is correct. Tip* - Add one or two tsp of gram flour to the mixture if it splits or breaks in the oil.
Drop the remaining mixture (small lemon size balls) into the pan.
Let them fry for a few minutes.
Flip and fry them till they turn golden.
Drain the pakoras on a kitchen napkin.
Soft like pillows from the inside and crunchy from the outside.
Serve hot with sauce or green chutney and enjoy anytime or with any meal as a snack.
