Poha Khichiya, or Kachri, is an effortless and delicious snack or a papad recipe prepared quickly. It is light and yummy. This poha kichiya is the easiest and the fastest papad recipe for making at home. No cooking, steaming, or sunlight is required to make these mouth-watering snacks. You only need five ingredients, poha, green chili, coriander, salt, and papad khar. Just wash the poha (flattened rice), add the remaining ingredients, mix, and knead a dough. Put in the mold and make chips. Dry them under the fan and enjoy them as a side dish for lunch, dinner, or tea time.Make these poha fryums any time of the year, and you don't have to wait for summer. They are so easy and quick to make; trust me, once you make them, you will not make rice khichiya which is time-consuming.
Take 250 grams of thick, flattened rice (poha) in a mixing bowl.
Wash it thoroughly under the running tap water until the flattened rice is white and all the dirt and particles are removed. Note - We need mushy and soft flattened rice, follow this step and do not skip it.
Leave the mixture to rest for at least 30 minutes to one hour.
After 30 minutes or one hour, Discard the excess water accumulated in the bowl.
The flattened rice should be soft and without any moisture content. Transfer it to a big plate.
Add salt, one tbsp of green chili paste, a handful of finely chopped fresh coriander, ¼ tsp of papad khar (flat spoon), and one tsp of cumin seeds (coarse, and this is optional). Note -The cumin seeds sometimes block the flow of the mixture smoothly from the mold; suggest using slightly crushed seeds.
Mix all the ingredients well and knead the dough without adding any water. Note - The mixture is very soft, and you should be able to knead it into a dough.
With hands greased, take some dough in our hands, and give it a cylindrical shape.
You can use any one of the molds which are available at home.
Or you can use this mold. Ensure to use the thinnest or the smaller size ring for this recipe.
Transfer the mixture to the mold and close it with the lid.
Turn the mold and rotate it to spread the mixture evenly on the plastic sheet.
Dry them under the fan for 2 to 3 days. After they have dried completely, they will shrink slightly.
They will double in size while frying.
Store them in an air-tight container and fry them anytime to enjoy with tea or as a side dish for lunch or dinner.
