Ingredients
3 cups or 45 gams Fox Nuts
½cupAlmonds
¼ cup + 2 tbsp Ghee
1cupJaggery
1½cupsWater
½cupRajgira Atta
½tspCardamom
2tbspNuts
3tbspWalnuts
Saffron
pinch Nutmeg
Instructions
Add 3 cups or 45 grams of fox nuts (makhana) in a thick bottom pan and roast on a low flame until crispy.
To check, take one fox nut and crush it with your fingers. Roast for a few minutes more if the fox nuts are not crispy.
Transfer the roasted fox nuts to a jar. Cool and grind them into a smooth powder.
Add 1 tbsp of ghee and ½ cup of almonds in a pan and roast them on a low flame for one to two minutes.
Transfer the roasted almonds to a jar. Cool and grind them into a powder.
Into the same pan, add 2 tbsp of chopped walnuts. Roast them for a few seconds.Tip - Do not roast for a long time. It may turn bitter.
Transfer them into a bowl and keep them aside for later use.
Add 1 cup of soft and dark-colored jaggery into a pan. Tip - The dark jaggery will give good color to the halwa. Both soft and hard jaggery work well for this recipe.
Add 1½ cups of water to the pan.
Boil the mixture until the jaggery dissolves in the water, and keep it aside for later use.
Add ¼ cup of non-melted ghee to a pan and let the ghee heat up.
Add ¼ cup of rajgira flour to the pan.
Stir continuously and roast on a low flame until the mixture turns slightly brown.
The mixture has turned slightly light brown.
Add the roasted ground almond powder and one tbsp of ghee, and roast on a low flame for 1 to 2 minutes.
Keep stirring, and add the jaggery water in batches. Make sure no lumps form in the mixture.
Add a little saffron to the mixture.
Stir and cook on a low flame until the mixture thickens.
The mixture is well combined.
Add ground fox nuts powder and mix all the ingredients well.
Add ½ tsp of cardamom powder, roasted walnuts, and a pinch of nutmeg, and mix all the ingredients well.
The halwa has released the ghee and is ready.
