Cream combined with milk powder gives softness and a creamy taste with a perfect balance of rose flavor.As this almond rose malai burfi (mithai) is for a festival, to make it more presentable and have a market-like look, I have decorated it with silver leaflets and dry rose petals and placed an almond on each piece of barfi.

Ingredients
2 cups or 250 grams Almonds
1.5 cups or 230 grams Sugar
1cupWater
3tbspFresh cream
1tspRed color
2tspRose essence
2tbspMilk Powder

Instructions
Take 2 cups or 250 grams of almonds in a bowl.
Add some to the grinding jar, and grind at the pulse mode.
The almond powder should be fine and smooth in texture.
Add 1 cup of water and 1.5 cups or 230 grams of sugar in a pan. Stir till the sugar dissolves in the water.
Boil till one string of consistency sugar syrup is formed.
One string consistency of sugar syrup is ready.
Lower the gas flame and add the ground almond powder to the sugar syrup.
Mix the ingredients until well combined.
Now add 3 tbsp of fresh cream, and mix it well.
Add 1 tsp of red color, 2 tsp of rose essence, and 2 tbsp milk powder.
Cook till the mixture leaves the sides of the pan on a low flame.
Add 1 tbsp ghee and mix it well. Cook for a minute, and you will see the barfi has started leaving the sides of the pan.
Add 1 tbsp ghee again and mix it well.
The barfi is ready if a ball can form from the mixture.
Place the mixture onto a butter-paper-lined greased tray.
With the spatula, spread the barfi evenly across the tray. Allow it to cool for 20 to 30 minutes.
Once cooled, remove the barfi from the tray. Apply little water on all the sides of the barfi.
Apply edible silver leaflets and gently press them using a piece of cotton to ensure they are firmly attached.
Cut them in the desired shape and size.
With the back of the spoon, apply a drop of sugar syrup on each piece of the barfi. Then place a dry rose petal and press firmly. Apply a drop of sugar syrup on an almond and place it over the rose petal.
Delicious Badam Malai Rose Barfi is ready.
Notes
The shelf life of this barfi is 2 to 3 days outside (as malai is added) and 7 to 10 days if kept in the fridge.
