How to make Gujarati Dahi Ki Kadhi Recipe(Updated)
Kadhi is a dish that originated in Rajasthan. It consists of a thick gravy made of gram flour and yogurt (to give a sour taste). It can be eaten with roti.Today, I am sharing the Gujarati Kadhi, which is slightly different; it is prepared with a blend of sweet and spicy curd mixture thickened with gram flour. The Dahi ki kadhi can be made with buttermilk or dahi, depending on your preference. Both ways work fine, and it tastes delicious. No pakoras are added to this dish, so it is an easy and quick recipe to make at home within 20 minutes. To make this Dahi Ki Kadhi spicy and flavorful, I have added a few cloves, a cinnamon stick, and some whole coriander seeds. I always use fresh yogurt or dahi to make this dish. The Dahi Kadhi tastes delightful if it is a little sweet and sour, so I have added dry mango slices to this recipe which you can skip if you are using sour yogurt or Dahi. Both the sweetness and tanginess can be adjusted. The Gujarati Dahi Ki Kadhi is always sweet. The amount of sugar depends on the individual preference. You may skip the sugar, but trust me, sugar enhances the flavor and makes it delicious. Suggest you add little sugar. Also, the consistency of the Dahi ki kadhi is slightly thinner compared to the Punjabi Kadhi. If you like thick consistency kadhi, add more besan(gram flour) or reduce the water quantity as per your choice.

Ingredients
1cupYogurt
3tbspGram flour
1tbspGhee
1tspMustard Seeds
1tspCumin seeds
1tspFenugreek seeds
1tspCoriander seeds
3Green Chilies
4Dry Red Chili
½inchGinger
fewCurry leaves
8piece Cloves
½inch Cinnamon stick
¼tsp Asafoetida
3Dried Mango slice
Salt as per taste
2tbspSugar

Instructions
Add 1 cup of yogurt and 3 tbsp of gram flour in a mixing bowl. Whisk until the mixture is lumps-free.
Add ½ cup water and mix well. Keep aside.
Add 1 tbsp ghee to a pan. Once the ghee heats up, add 1 tsp of mustard seeds.
When the seeds crackle, add 1 tsp cumin seeds, 1 tsp fenugreek seeds, 1 tsp coriander seeds, three green chilies chopped, four dry red chilies, ½ inch chopped ginger, eight cloves, ½ inch cinnamon stick, ¼ tsp asafoetida, and a few curry leaves.
Saute for a few seconds or until it turns aromatic.
Add 1½ cups of water, and stir it well.
Cover with the lid and boil the water for 5 minutes.
Add two or three dried mango slices. This is an optional step. Adding this will make the kadhi slightly tangy, and sugar will give sweetness.
Add yogurt and besan-prepared mixture.
Add salt and 2 tbsp sugar and mix it well.
Add ½ cup of water to adjust the consistency of the kadhi. Mix it well.
Cover with the lid. Reduce the flame and simmer the kadhi for 10 minutes.
Add fresh coriander and mix it well. The Dahi Ki Kadhi is ready.
