Onion Pulao is a rice recipe made of rice, onions, spices, and herbs. Lots of variations can be used to prepare this pulao. A perfect dish to make if no vegetables are available at home or if you are in a hurry to make the meal for the day. A simple and quick rice recipe in just 15 minutes, provided rice is soaked in advance. The onion Pulao can be made in a cooker, but I like making the pulao in the pan. Every grain of rice standing out is the beauty of the pulao. The rice may sometimes turn mushy or soggy in the cooker due to the rice quality. With easy three ingredients - Onion, tomato, and rice available at home, delicious in taste, no curry or gravy required. Make this pulao for lunch or dinner; enjoy it with any curry, a bowl of cold curd, or a boondi raita. To make this simple onion pulao more flavorful and delicious, I have used a few dry spices, onions, tomatoes, rice, common spices, and herbs in this recipe. Initially, the onions with dry spices are roasted until they turn golden, followed by cooking the tomatoes until they are soft and mushy, common spices, rice, and water, and finally cooked on a medium flame till the rice is cooked well.
Add 2 tbsp of oil to a pan, and let the oil heat. Add one tsp of cumin seeds, four dry red chilies, two bay leaves, one-inch cinnamon stick, 3 - 4 cloves, one green chili chopped, and ½ inch of ginger. Saute for a minute.
Add one chopped onion and saute for a minute. Stir occasionally and cook till the onions turn slightly brown.
Add two chopped tomatoes, a pinch of salt, and saute. Cover and cook for 5 minutes till they turn soft and mushy.
Add ¼ tsp of turmeric powder, ½ tbsp of coriander powder, ½ tbsp of red chili powder, and 1 tsp of garam masala or biryani pulao masala. Mix all the ingredients well and cook for a minute.
Add 1 cup of rice soaked in water for 20 minutes. Salt and some fresh coriander and mix all the ingredients well.
Add 1½ cups of water and cook the rice on a medium flame. Stir occasionally, cover with the lid, and cook the rice.
After 7 to 10 minutes, stir and check whether the rice is cooked.
Place the pot on a Tawa, and cook on a low flame for 5 minutes.
The onion pulao is ready to serve.
Garnish it with some fresh coriander leaves and enjoy with raita.
