I am sharing a simple and easy process—no soaking and peeling of almonds. Grind the almonds, roast ground almond powder, and coconut powder for a few minutes, prepare sugar syrup, and make this delicious badam coconut barfi in less than 20 minutes. Ingredients
¾cupAlmonds
¼cupDesiccated Coconut
¾cupSugar
½cupMilk
SaffronLittle
¼tspCardamom powder
Nutmeg pinch
3 to 4tbsp Ghee
Instructions
Take ¾ cup of almonds and grind them in a pulse mode in batches.
The ground almonds should be a smooth texture.
Add 1 tbsp of ghee to a pan and heat up slightly. Add the almond mixture to the pan and roast on a low flame for a minute or two.
Switch off the gas. Add ¼ cup of desiccated coconut into the same pan and roast for a minute. Tip*- The color of the coconut should not change.
Transfer the roasted mixture to a bowl. Keep it aside for later use.
Add ½ cup of milk and ¾ cup of sugar to a pan. Stir and cook till the sugar dissolves in the milk.
Cook till one string sugar consistency.
Stir and add the almond mixture and 1 tbsp of ghee.
Stir and cook till the mixture is well combined. Add little saffron and 1 tbsp of ghee.
Stir and cook until the mixture leaves the pan's sides. Add ¼ tsp of cardamom powder and a pinch of nutmeg.
The barfi is ready if a ball can form from the mixture.
Transfer the mixture to a greased tray. Spread it evenly with a spatula.
Apply silver vark and cut them into pieces.
Garnish with a sliced almond soaked in saffron and little desiccated coconut.
