Kaju Anjeer Roll is one of Diwali's most popular and healthier mithai. The Kaju Anjeer roll is a royal treat that is pleasing to the eyes, super delicious, tender, and nutty, with a hint of saffron and honey. The Kaju anjeer roll looks appealing and tasty. While shopping for Diwali, this mithai always attracted my curiosity in the sweets shop to learn how to make it at home. Now I have figured out how to make it; I make this role every year for Diwali or during any celebrations. Anjeer has many health benefits - It improves digestion, controls blood pressure, rich in calcium, and many more. I prefer making this roll instead of barfi during Diwali, the balance of health and a sweet tooth. Take 200 grams of cashew nuts and grind them at a pulse mode. Pass the ground mixture through a sieve.
Keep aside the un-sieved mixture for later use.
Add 1 tbsp milk powder to the ground cashew nut mixture and keep aside.
Take 60 grams of sugar and ¼ cup of water. Stir and cook till one string of consistency sugar syrup is formed.
Switch off the gas flame and add saffron soaked in water into the pan.Tip* - Skip the saffron and make a white cashew base.
Add the ground cashew nut powder and 1 tsp of ghee. Mix all the ingredients until well combined.
To give a shine to the roll, spread the mixture in the pan and combine it back together. Continue doing this process a couple of times.
A ball can be formed. The outer layer of the roll is ready.
Transfer the mixture to a plate. Cool the mixture.
Take some water in a pan and add nine pieces of figs (anjeer). Boil the figs for 10 minutes or until softened.
Remove with a strainer and squeeze out the extra water from the fig. Transfer to a plate and allow it to cool.
Once cooled, cut them into pieces and grind them into a fine paste. Take 1 tsp of ghee and add the fig paste to the pan.
Roast on a low flame for 5 to 7 minutes. Slowly the mixture will turn non-sticky.
Add 1 tbsp of glucose (optional), 35 grams of mixed nuts (almonds, cashew nuts, and pistachios), and leftover cashew nut powder. Mix all the ingredients well until well combined.
Transfer the mixture to a plate. Add 3 tbsp of honey and mix all the ingredients well until well combined.
Divide the fig(Anjeer) mixture equally, each piece around 23 to 25 grams in weight, and then roll each piece into 10 cm long and keep it aside.
Similarly, divide the cashew nut mixture equally, each piece around 35 to 36 grams in weight, roll each piece into a ball shape, and keep it aside.
Take one cashew nut ball mixture and roll it into a small puri of 12 cm. Place the prepared fig roll over the cashew nut puri and move it across until the end.
Cut any extra ends, and seal the ends properly. Using your palm, roll and give a proper shape.
Decorate it with silver leaflets. Wrap the fig roll into butter paper and keep it in a fridge for an hour, or leave it outside at room temperature for 2 to 3 hours to set. Later, cut them diagonally.
