Dates Ladoo or Dates Laddu, also known as khajur Laddu or Khajur ke Laddu, is a type of laddu made with dates as the main ingredient. I have added honey to this recipe, which is entirely optional, but eating dates and honey in winter keeps you warm.

Ingredients
¼cup or 40 to 50 grams Cashew Nutschopped
¼cup or 40 to 50 grams Almondschopped
¼cup or 40 to 50 grams PistachiosSliced
250grams Soft Dates
2tbsp Pumpkin Seeds
2tbsp Sunflower Seeds
2tbsp Melon Seeds
¼cupDesiccated Coconut
2tbsp Raisins
2tbsp Sesame Seeds
2tbsp Flax Seeds
2tbsp WalnutChopped
1tbsp Honey
4½tbsp Pure Ghee
¼tspCardamom Powder
Pinch Nutmeg
Instructions
Add 1½ tbsp of pure ghee to a pan. Add ¼ cup or 40 to 50 grams of chopped almonds and roast on a low flame for a minute.
Add ¼ cup or 40 to 50 grams of chopped cashew nuts and roast for a minute.
Add ¼ cup or 40 to 50 grams of sliced pistachios and roast for a minute.
Turn off the gas flame. Add 2 tbsp of chopped walnuts and roast for a few seconds.
Transfer the roasted nuts to a bowl and keep aside.
Add ½ tbsp pure ghee into the same pan. Once the ghee melts, add 2 tbsp of pumpkin seeds, 2 tbsp of sunflower seeds, 2 tbsp of melon seeds, and 2 tbsp of flax seeds, and roast on a low flame for a minute.
Add 2 tbsp of sesame seeds and roast for a few seconds.
Turn off the gas flame, transfer the roasted seeds into a bowl, and keep aside.
Now, again add 1 tbsp of pure ghee to the same pan. Once the ghee melts, add 2 tbsp of raisins and roast on a low flame till they puff up. Transfer the raisins into a bowl and keep aside.
Now add ¼ cup desiccated coconut to the same pan and roast on a low flame till the raw smell of the coconut goes.
Turn off the gas flame, transfer the roasted coconut into a bowl, and keep aside.
Add 1½ tbsp of pure ghee to the same pan. Once the ghee melts, add 250 grams of soft dates.
On a low flame, roast for 2 to 3 minutes or until the dates are soft.
Turn the gas flame off. Add all the roasted mixture, ¼ tsp of cardamom powder, and a pinch of nutmeg, and combine all the ingredients well.
Transfer the mixture to a bowl. Add 1 tbsp of honey (optional)
Once the mixture is slightly cooled, with greased hands, combine all the ingredients well.Note - Do not cool completely, or else you will not be able to make ladoo.
Take a little portion of the mixture in your hands, and make a ladoo.
