These deep-fried fritters are the perfect blend of chopped mint leaves, coriander leaves, green chilies, ginger, gram flour, and salt mixed well to form a medium consistency batter. For crispness, a pinch of baking soda and little oil is added and then deep-fried in small portions. This pudina pakoda is soft on the inside and crispy on the outside.This pudina pakoda recipe is very versatile. You can always add onions, vegetables, garlic, and spices like turmeric powder, red chili powder, and garam masala in the batter. And also, along with gram flour, you can add little rice flour. I am sharing a simple mint pakoda recipe prepared in 10 minutes without onion, garlic, and other spices.

Ingredients
1cup Gram Flour
2-3 Green Chilies chopped
½inch Ginger finely chopped
2tbsp Fresh Mint Leaves finely chopped
Coriander Leaves
Asafoetida
Salt as per taste
pinch Baking Soda
1tbsp Oil
Instructions
In a mixing bowl, add 1 cup of gram flour, two to three chopped green chilies, ½ inch finely chopped ginger, two tbsp of mint leaves, some coriander leaves, a pinch of asafoetida, and salt as per taste.
Mix well. Add water gradually and prepare a semi-thick batter or medium consistency batter.
Add a pinch of baking soda and 1 tbsp of oil to the batter and mix it well.
Drop a small-sized ball mixture into the medium-hot oil.
Flip occasionally and fry until crispy and golden in color.
Enjoy them either at teatime or at lunch or dinner.
