Gujarati Mooli Muthiya - Healthy Indian Snack(Updated)
Mooli Muthiya is a Gujarati super healthy and nutritious snack made with white radish, radish leaves, and spices. Serve this delicious and mouth-watering mooli muthiya at teatime or as a side dish with any meal.Gujarati Mooli Muthiya is a traditional snack prepared by steaming dumplings made of a spiced mixture of flour and vegetables. In this recipe, I have used a combination of three flour - wheat flour, gram flour, and rice flour. This mooli muthiya recipe is versatile. Replace any flour with Jowar or Bajra atta, and replace radish with methi or fenugreek leaves, white pumpkin or Dudhi, or a combination of methi and Dudhi. All the combinations work well for this snack.To make the muthiya soft, yogurt or curd is added. In this mooli muthiya recipe, I chose to omit this ingredient, but you can include it as desired. Additionally, if you enjoy the taste of garlic in your muthiya, you can add it to this recipe. However, I have chosen not to use garlic.The muthiya can be prepared much in advance and served with green pudina chutney. White Radish, or Mooli (in Hindi), has many health benefits and is used in making parathas, raita, or salad. The Radish greens or Mooli ke patte(in Hindi) that are more nutritious and have more health benefits are ignored and not included in our daily diet. In this muthiya recipe, we have not thrown out the radish leaves but instead utilized them.

Ingredients
1cupGrated White Radish
2cupRadish leaves
Fresh Coriander
2Green Chilies
½inchGinger
¼cupGram flour
¼cupRice Flour
1¼cupWheat Flour

¼tspTurmeric Powder
¾tbspCoriander Powder
½tbspRed Chilli Powder

Instructions
Add 2 cups finely chopped radish leaves and 1 cup grated white radish in a mixing bowl.
Add some fresh coriander, two green chilies chopped, and ½ inch ginger finely chopped.
Then add ¼ cup gram flour, ¼ cup rice flour, 1¼ cup wheat flour, 1 tbsp semolina, and 2 tsp sesame seeds.Tip* - This recipe can be made alone with wheat flour too.
Finally goes all the spices - ¼ tsp asafoetida, ¼ tsp turmeric powder, ¾ tbsp coriander powder, ½ tbsp red chili powder, salt, juice of a half lemon, and 3 tbsp oil. Mix all the ingredients well.
Radish will start releasing the water. Knead a semi-soft dough with this released water. Tip* - Do not add any additional water to knead the dough.
Take a steamer or a big kadai, keep a ring in the center, and add sufficient water to the kadai.
Place a greased steamer plate and let it heat up.
Take a portion of the dough and give it a cylindrical shape.
Place them one by one over the steamed plate.
Cover and steam for 20 minutes.
After 20 minutes, insert a knife and check the muthiya. They are ready if the knife comes out clean else, steam them for more time.
Cool for 15 minutes.
Cut them into small or desired pieces.
In a pan, add 1 tbsp oil and heat it. Add 1 tsp mustard seeds. As they start crackling, add two silt green chilies. Saute for a minute.
Add the steamed muthiya, and saute for 2 to 3 minutes. Garnish it with some fresh coriander.
