I always bake them during Diwali to share them with my friends and near family members.To make these Nankhatai, combine ghee (clarified butter) and sugar and mix it with the dry ingredients to make a dough. Then divide the dough into portions, roll them into a medium-sized ball, slightly flatten it, and garnish with sliced pistachios. I baked them until golden in color.The only important thing in this recipe is properly beating the ghee and sugar. If done correctly, you will be able to combine the mixture quickly. You can still resolve this by adding one or two tablespoons of milk to form the dough.

Instructions
Add ½ cup of ghee to a mixing bowl.
Whisk in one direction for a minute.
Add ½ cup powdered sugar.
Whisk in one direction until both ghee and sugar are well combined.
Add 1 cup flour, ½ tsp cardamom powder, and a pinch of baking powder (optional).
Gently mix all the ingredients and knead a dough.
Take a little portion of the dough, roll it into a small ball, and gently flatten it with your hands.
Place on a baking tray. Give the desired shape.
Top it with some sliced pistachios. Bake at 160 degrees for 20 to 25 minutes.
The delicious and tasty nankhatia's are ready.
Serve crunchy Nankhatia with tea or coffee.
Notes
Whisk ghee and sugar properly. An essential step in this recipe, or you will be unable to knead a perfect dough.
Check the oven temperature before baking, as all ovens have different settings. Bake at the temperature you bake cookies or cake.
You can bake a few cookies first to understand the temperature.
Once the cookies are out of the oven, lift a cookie with a flat spatula. If you can raise them quickly, they are baked well; else, place them back in the oven to bake
Unlike cake, you can place the cookies back in the oven to bake if not baked properly.
