125gramsBottle Gourd
1½cupsYogurt
Rock Salt or Normal salt or Sendha Salt as per taste
1Green Chilies
¼tspRoasted Cumin Powder
¼tspBlack Pepper Powder
¼tspGinger Powder
Fresh Coriander
Red Chili Powder
Instructions
Take 125 grams of bottle gourd. Wash and wipe it with a clean napkin.Tip*- Ensure you select a green in color and thin vegetable. A thinner bottle gourd (Lauki) has fewer seeds or is seedless.
Cut off the top front part, then cut it in half and peel off the skin.
Grate the gourd using the large holes of the grater. Be quick in this process; the bottle gourd may turn black when exposed to air. To prevent this, soak it in water if required until you boil it.
Add water into a pan and let it boil. Add the grated gourd into the hot water. Boil it for a minute or two.
After one to two minutes, press the gourd (Lauki) with your finger to check it is cooked.
Strain the water and squeeze the excess water with a spoon.
Take 1½ cups of yogurt or dahi and whisk it well until smooth.
Add one chopped green chili, fresh coriander, ¼ tsp ginger powder, ¼ tsp black pepper powder, ¼ tsp roasted cumin powder, rock salt, or (sendha namak or common salt) as per taste. Mix all the ingredients well.Tip* - Use sendha namak when preparing the raita for fasting.
Add the gourd (Lauki) and mix all the ingredients. Tip*- Add water if required and adjust the consistency.
Finally, garnish with fresh coriander on the top and sprinkle some red chili powder as per the taste for extra flavor, which is optional.
