Let me explain if butter is more than the chakli trends to break while forming them or while frying. Sometimes the chakli turns hard or looks crispy on the outside but soft on the inside after frying.The temperature of the oil and frying method is the critical steps while making chakli. Suggest you first heat the oil on a high flame, and once the oil is medium hot, reduce the gas flame to medium. Add a few chaklis, and now reduce the gas flame to low. Allow the chakli to fry for 5 minutes, and don't flip to another side. Then flip and fry till they turn golden in color. The chakli will be crispy and crunchy.

Ingredients
½cup Roasted Chana Dal
1 cup Thick Poha (flattened rice)
1cupRice Flour
½tsp Carom Seeds
1½tbsp White Sesame Seeds
¼tsp Turmeric Powder
1tbsp Coriander Powder
1tbsp Red Chilli Powder
Salt as per taste
2cups Water
Oil for frying
Instructions
Take ½ cup of roasted chana dal and 1 cup of thick poha (flattened rice) in a mixer jar and powder it finely.
Sieve it into a wide bowl.
In the same bowl, add 1 cup of rice flour, ½ tsp of carom seeds, 1½ tbsp of white sesame seeds, ¼ tsp of turmeric powder, 1 tbsp of coriander powder, 1 tbsp of red chili powder, and salt. Mix all the ingredients well and keep aside.
Add 2 cups of water to a pan and let it boil on a medium or high flame. Once it starts to boil, reduce the gas flame to low.
Stir and add the prepared mixture in batches. Now you can switch off the gas flame and mix all the ingredients well.
Transfer the mixture to a mixing bowl. When the mixture is slightly hot, knead the dough well. The dough should be smooth in texture.
Roll some portion of the dough between your palms and give it a cylindrical shape.
Place this mixture in greased chakli maker, and close it.
Press and give a spiral shape and seal the ends to ensure they don't puff up while frying.
Lift the chakli slowly with the help of a flat spatula.
Transfer the chakli to medium-hot oil one by one. And now reduce the flame to low and fry them.
Allow the chakli to fry for 5 minutes. Do not flip the chakli immediately.
After 5 minutes, flip and fry them until golden in color. The chakli is ready if bubbles are less in the oil and the chakli is sinking in the pan. Remove them with the help of a fork.
Cool and store them in an air-tight container. Stays fresh for 15 days.
