Gajar ki barfi or Carrot Burfi is a traditional Indian sweet made from grated fresh carrots, milk, and sugar. But in this recipe, I have used a combination of fresh full-fat cream milk, almond powder, and milk powder; the rationale behind using milk powder and almond powder is to cut the moisture so that it becomes dry quickly and easy to shape into fudges or barfi. Alternatively, to make Gajar Pak Barfi, add grated coconut and khoya, which also helps to absorb moisture and shape it. Moreover, adding coconut also brings a different dimension to flavor and taste.Carrot Burfi, or Gajar Ki Barfi, is the extended version of the famous Indian dessert Gajar Ka Halwa; the recipe is already available on the website. The taste is similar to gajar ka halwa; the only difference is the texture and protein content, as almonds powder is rich in protein.

Ingredients
500grams Grated Carrot
3½tbsp Ghee
1½cupMilk
120grams Sugar
½cup Milk Powder
½cup Almond Powder
2tbsp Almonds and Pistachioschopped
¼tsp Cardamom powder
Saffron soaked in hot milk
pinch Nutmeg

Instructions
Add 1 tbsp of ghee to a thick bottom pan and let the ghee heat for a minute. Add 500 grams of grated carrot to the pan.
Mix well and saute on a low flame for 5 minutes.
Add 1½ cups of milk and mix all the ingredients well.
Cover with the lid and cook until the carrots absorb the milk. Stir occasionally, and mash the carrots with a spatula to soften them.
Add 120 grams of sugar and mix all the ingredients well.
Stir and cook till the sugar dissolves in the mixture. Also, keep mashing the carrots with a spatula.
Cover with the lid and cook until the mixture absorbs the sugar syrup.
Mix well. Add ½ cup of almond powder, ½ cup of milk powder, 2 tbsp of almonds and pistachios finely chopped, saffron soaked in milk, and 1 tbsp of ghee. Tip* - To make almonds powder, grind almonds in a grinding jar.
Stir and cook on a low to medium flame until the mixture leaves the sides of the pan.
After 5 minutes, add 1 tbsp of ghee and cook till the mixture leaves the pan's sides.
The mixture has left the sides of the pan and combined well. A ball can be formed the barfi is ready.
Add ¼ tsp of cardamom powder, slightly grated nutmeg powder, and ½ tbsp of ghee. Mix all the ingredients well.
Transfer the barfi mixture to a greased tray and spread it evenly. Garnish it with chopped almonds and pistachios.
Let the barfi cool and set for 3 to 4 hours. Cut into desired shape and size.
