Our recipe got inspired by – Haldiram’s Mewa Bites, a traditional mawa-based barfi prepared in assorted flavors like rose, orange, mango, and chocolate.
What is Gulkand?
Gulkand is a sweet preserve of rose petals originated from the Indian subcontinent. ‘Gul’ means flower, and ‘Kand’ means sugar in Persian. Traditionally rose petals and sugar are placed in layers in an air-tight jar. This jar is exposed to sunlight for a few weeks until the sugar dissolves, evaporates, and is well-combined with the rose petals (like a jam).
This method is very tedious and time-consuming. But now gulkand is readily available in the market at a very reasonable price. You can use store-bought Gulkand for this recipe, Patanjali Gulkand or Premacha Gulkand are good brands.
Gulkand has many health benefits – besides being a summer coolant, it is rich in calcium and iron. From ancient times, Gulkand in paan acted as a mouth freshener.

Mawa Gulkand Bites Recipe (Updated)
Ingredients
- 150 grams Mawa / Khoya / Whole dried milk
- 75 grams Cashew nuts
- ¼ cup Warm Milk
- 2 tbsp Sugar
- 2 tbsp Rose Petal Jam / Gulkand
- 1 tbsp Dry rose petals
- ¼ cup Milk Powder
- ½ tsp Rose Emulsion
- 1 tbsp Ghee
- 2 tbsp Almond / Cashews / Pista
Ingredients for stuffing
- 1½ tbsp Gulkand with nuts
- 6 tbsp Dry rose petals
- 6 tbsp Pistachios powder
- 12 piece Pistachios
Instructions
- In a bowl, add cashew nuts, and pour warm milk. Mix it well.
- Cover it with a lid. Rest for 30 minutes.
- After 30 minutes, grind the mixture into a smooth paste.
- Take a non-stick pan or a Kadai, and add khoya or mawa.
- On a low flame, roast the khoya or mawa for 10 minutes.
- Now add the cashew nut paste, and mix it well.
- Roast the khoya and cashew nut mixture for 10 minutes on a low flame.
- Add sugar and gulkand or rose petal jam. Mix all the ingredients well.
- Add dry rose petals, milk powder, and rose emulsion, and mix all the ingredients well.
- Add ghee, some nuts, if required little rose emulsion, and mix all the ingredients well.
- Take a little mixture in your hand and form a ball. If it binds, it is ready. Else roast for a few more minutes.
- Now take out the rose mixture in a bowl.
- Allow the rose mixture to cool completely.
- Now take the stuffing ingredients – gulkand with nuts, dry rose petals, pistachios powder, and pistachios in a separate bowl.
- Take a small portion of the mixture, give it a round shape, and flatten it with your fingers. Add a tsp of gulkand.
- Bring all the ends together, close them, and seal them. Rotate it between your palm, and give it a square shape.
- Coat the rose bites in dry rose petals. Now place the pistachio over it and press it.
- Similarly, make another rose square shape bite. Coat this in pistachio powder and place the pistachio over it.
- Your Mewa Bites are ready. You can prepare them during Diwali or any festival and share them with your friends.
