Easy Mooli Paratha Recipe Without Stuffing

Mooli Paratha is a whole-wheat flour flatbread made with radish and some Indian spices. Mooli in Hindi means radish, and paratha is an unleavened flatbread made of whole wheat. As the paratha is made of radish, it is called Mooli ka paratha.

This is another type of paratha from Punjabi cuisine, usually served with curd, pickle, chutney, or butter. They are commonly made for breakfast but can be enjoyed at lunch or dinner.

There are two ways to make this mooli ka paratha. The radish stuffing is wrapped in a small layer of dough, and the paratha is rolled (usually how we make aloo paratha), or the radish with the other ingredients is added directly to the flour to make a dough, the paratha is rolled out and toasted with clarified butter(ghee).

The first method is the traditional method, but it is not easy to make the paratha in this method. Radish has lots of water content;
When you try to roll the paratha with the radish stuffing inside, it releases moisture, making it slightly tricky to roll the paratha, and the radish stuffing sometimes tends to spread out.

I am sharing the second method which is very easy and quick to make. In this method, also you need to follow some tips to make perfect mooli parathas.

  1. Always take fresh and tender radishes, or else you may find it slightly tricky to grate them.
  2. Add salt to the grated radish and let it rest for 20 minutes.
  3. Drain and squeeze all the excess water from the radish before adding it to the wheat flour.
  4. Do not add water while kneading the dough. Slowly radish will start releasing water. Knead the dough with this released water. 
  5.  After kneading the dough, do not give a rest. Immediately start making the parathas. Radish has high water content, and it may release water which may result in a more soft dough, making it difficult to make the paratha easily. 
  6. Be careful while adding the salt.

Ingredients

  • 2 piece White Radish medium size
  • 2 cup Wheat Flour 
  • 3 Green Chilies
  • Fresh Coriander some
  • ¼ tsp Turmeric Powder
  • ½ tbsp Coriander Powder
  • ½ tbsp Red Chilli Powder
  • 1 tsp Garam masala 
  • 2 tsp Salt
  • 2 tbsp Oil
  • Water kneading the dough
  • Oil / Ghee For applying on the paratha

Instructions

  • Take two white radishes and wash them with water. Cut the front and back ends of the radish. Peel off the skin.
  • Grate the radish.
  • Add 1 tsp of salt and mix it well.
  • Cover and rest the mixture for 20 minutes. Radish will slowly release water due to salt content.
  • After 20 minutes, take some portion of the grated radish in your hand, and press with your other hand to squeeze out the excess water. Keep this aside in another bowl.
  • Take 2 cups of wheat flour in a mixing bowl and add the grated white radish.
  • Add three green chilies chopped, some fresh coriander, ¼ tsp turmeric powder, ½ tbsp coriander powder, ½ tbsp red chili powder, 1 tsp gram masala, 1 tsp salt, and 2 tbsp oil. Please check on salt as added previously in white radish.
  • Mix all the ingredients well.
  • Radish will start releasing the water. Knead a semi-soft dough with this released water.
    Tip* – Do not add any additional water to knead the dough.
  • Add 1 tsp of oil.
  • Knead the dough well once again.
  • Pinch a medium size ball of dough, roll, and flatten it.
  • Coat some dry flour and roll the portion thinly into 152 mm in a circle.
  • Place the rolled paratha on a hot tawa and cook for a minute.
  • After one minute, flip the paratha when the base is partly cooked.
  • Apply ghee and press gently. Flip once or twice till both sides are properly cooked.
  • Serve the paratha with curd, green chutney, and butter.

Notes

  1. Try to squeeze more amount of water from the radish before adding to the flour
  2. Don’t add water while kneading the dough. Slowly radish will start releasing water and you can knead dough properly with released water 
  3. After kneading, don’t rest the dough. Immediately start making parathas as the radish will keep releasing some water which will turn the dough soft making it difficult to roll the paratha. Ensure tip 1 is followed correctly
