I have used the mold, readily available in the market in different sizes. Mould makes the work easy and gives a good finish.

I have added fresh cream to the pineapple modak recipe, and the shelf life of this sweet dish is 2 to 3 days left at room temperature, and in the fridge can last for a week. Ingredients

Modak Base Preparation

  • ½ cup Desiccated coconut
  • 4 tbsp Milk Powder
  • 2 tbsp Fresh cream
  • 3 tbsp Pineapple crush
  • 2 tbsp Cashew nut powder
  • ½ tsp Pineapple essence 
  • few drops Yellow color 

Modak Stuffing

  • 2 tbsp Cashew nuts finely chopped
  • 2 tbsp Pistachios finely chopped
  • 2 tbsp Almonds finely chopped
  • 1 tbsp Cashew nut powder
  • 1 tsp Pineapple crush 
  • 1 tbsp Modak prepared mixture

Instructions

  • In a pan, add ½ cup of desiccated coconut and on a very low flame roast for 3 to 4 minutes. Tip*- The color of the coconut should not change.
  • Switch off the gas flame. Add 4 tbsp milk powder, 2 tbsp cashew nut powder, 2 tbsp fresh cream, 3 tbsp pineapple crush, ½ tsp pineapple essence, and a few drops of yellow color.
  • Mix all the ingredients until well combined.
  • Now switch on the gas flame. Cook on a low flame until the mixture leaves the sides of the pan. It will take 2 to 3 minutes.
  • Keep aside 1 tbsp of the mixture for stuffing.
  • Transfer the mixture to the plate and allow it to cool.
  • For the stuffing – take 2 tbsp chopped cashew nuts, 2 tbsp chopped pistachios, 2 tbsp chopped almonds, 1 tbsp cashew nut powder, 1 tsp pineapple crush, and 1 tbsp modak mixture in a mixing bowl. Mix all the ingredients well.
  • With a greased hand form a roll.
  • Take a little mixture in your hand and roll it into small balls.
  • Now take a little of the prepared coconut base mixture and roll it in a cylindrical shape.
  • Take a modak mold and hold the open side of the mold upwards. Ensure the mold is closed with a pin or hold it tight so it does not open.
  • Place the rolled coconut mixture in the mold and spread it evenly across the mold with your finger.
  • Place the dry fruit ball (stuffing) in the center of the mold.
  • Close the ends with the coconut base mixture.
  • Open the modak mold.
  • Gently remove the modak from the mold.
  • Serve this delicious pineapple modak to Bappa.
