Ingredients

  • 1 big or 900 grams Bottle Gourd
  • 3 tbsp Oil
  • ½ tsp Mustard Seeds
  • ½ tsp Cumin Seeds
  • ½ tsp Fenugreek Seeds
  • 3 to 4 Green Chilies
  • 1 inch Ginger
  • ¼ tsp Asafoetida 
  • ¼ tsp Turmeric Powder
  • ¾ tbsp Coriander Powder
  • ½ tbsp Red Chilli Powder 
  • ¼ tsp Mango Powder
  • ½ tsp Garam Masala
  • Salt as per taste
  • 1 tsp Sugar
  • Fresh coriander leaves

Instructions

  • Take one big piece or 900 grams lauki or bottle gourd and wash it with water. Wipe it with a clean napkin. Cut the front and back ends and peel off the skin.
  • To exclude the seeds, slightly cut the white part off or remove the seeds with your fingers.
  • Cut into medium size pieces and keep them in water.
  • Add 3 tbsp of oil to a pan and let the oil heat. Add ½ tsp of mustard seeds and let the seeds crackle.
  • Add ½ tsp of cumin seeds, ½ tsp of fenugreek seeds, 3 to 4 green chilies chopped, 1-inch ginger chopped, ¼ tsp of asafoetida, and saute for a few minutes.
  • Add the chopped bottle gourd and mix all the ingredients well. Cover and cook on a medium flame.
    Tip* – The bottle gourd will release water, so there is no need to add any additional water.
  • Stir occasionally and cook till the vegetable is cooked well.
  • Add ¼ tsp of turmeric powder, ¾ tbsp of coriander powder, ½ tbsp of red chili powder, ¼ tsp of mango powder, ½ tsp of garam masala, salt as per taste, and 1 tsp of sugar.
  • Mix all the ingredients well and cook for a few minutes.
  • Add some fresh coriander leaves and mix well. Cook for a minute.
  • The sabji is ready.
