Ingredients
Pista Barfi Preparation
- 100 grams Pistachios
- 30 grams Sugar
- 1 tsp Milk Powder
- ¼ tsp Cardamom powder
- 1 tbsp Ghee
- ¼ cup Water
- a drop of Green Color
Cashew Nut (Kesar) Barfi Preparation
- 200 grams Cashew Nuts
- 60 grams Sugar
- ¼ cup Water
- Saffron soaked in milk
- 1 tbsp Milk powder
- ¼ tsp Cardamom powder
- 1 tbsp Ghee
- 2 tbsp Sliced Pistachios
- Sliced Pistachios garnish
Instructions
Pista Barfi Preparation
- Take 100 grams of pistachios. Grind them at a pulse mode in batches.
- Transfer the mixture to a bowl. Ensure the pistachios are ground to a fine powder.
- Add 1 tsp of milk powder and ¼ tsp of cardamom powder. Mix all the ingredients well.
- Add a drop of green color.
- Add ¼ cup of water and 30 grams of sugar to a pan. Stir till the sugar dissolves in the water.
- Boil the mixture till one string of sugar syrup is ready. Turn off the gas flame.
- Now add the prepared pistachio powder and mix it well.
- Add 1 tbsp ghee to the mixture and mix all the ingredients well.
- Grease a box and place butter paper on it. Transfer the mixture and spread the mixture evenly with the spatula.
- Allow the mixture to cool down.
Cashew Nut(Kesar) Barfi Preparation
- Take 200 grams of cashew nuts. Grind them at a pulse mode in batches.
- Transfer the ground mixture into a bowl. Ensure the cashew nuts are ground to a fine powder.
- Add 1 tsp of milk powder and mix all the ingredients well.
- Add ¼ cup of water and 60 grams of sugar to a pan. Stir until the sugar dissolves in the water.
- Boil the mixture till one string of sugar syrup is formed. Turn off the gas flame.
- Add some saffron, prepared cashew nut mixture, and ¼ tsp cardamom powder into the sugar syrup.
- Mix until all the ingredients are well combined. Initially, the mixture may be slightly sticky(due to cashew nuts).
- Spread the mixture in the pan and bring them back together. Continue this process for a few minutes. This way, the excess moisture will dry out, and the mixture will be non-sticky.
- Add 2 tbsp sliced pistachios and 1 tbsp ghee. Mix well.
- The barfi is ready if you can form a ball.
- Apply little ghee on the previously prepared pistachio barfi.
- Place the prepared cashew nut mixture over the pistachio barfi and spread it evenly with a spatula.
- Garnish it with some sliced pistachios and gently press it with the spatula. Cool the barfi.
- Once cooled, cut in the desired shape and size.
- Delicious Kesar Pista Barfi is ready to serve.
