Ingredients

  • 3 Potatoes
  • Puree of 4 tomatoes
  • 2 Drumstick
  • 2 tbsp Oil
  • ¼ tsp Asafoetida
  • 2 green chili, ½ inch ginger, fresh coriander
  • ¼ tsp Turmeric Powder
  • ½ tbsp Red Chilli Powder
  • ¾ tbsp Coriander Powder
  • ¼ tsp Kitchen King Masala 
  • ¼ cup Water
  • 1 tsp Sugar
  • Salt as per taste

Instructions

  • Take two green chili, ½ inch ginger, fresh coriander and grind it into a smooth paste.
  • Add ¼ tsp of turmeric powder, ½ tbsp of red chili powder, ¾ tbsp of coriander powder to the green masala paste and keep it aside.
  • Take three medium-sized potatoes. Wash and peel the potatoes and chop them into long strips. Retain them in a bowl of water and keep them aside.
  • Take two drumsticks. Wash and peel off the skin, and chop them into 1-inch long strips.
  • Add enough water and a little salt into a pan and boil the water. Once it starts to boil, add the chopped drumstick and cook them till 95%.
  • Add 2 tbsp of oil to a pan and heat the oil. Add ¼ tsp of Asafoetida and saute it.
  • Add the prepared masala to the pan and saute.
  • Add little water and saute it for a few seconds.
    Tip* – Adding water at this stage prevents the masala from burning.
  • The mixture will release oil. Add potatoes and salt and saute for a minute or two.
  • Add puree of four tomatoes, 1 tsp of sugar, ¼ tsp of kitchen king masala, and mix, combining all.
    Tip* – To make tomato puree, take four tomatoes, cut them into long strips, and boil them for 5 minutes. Cool them and blend them in a mixie jar.
  • The gravy consistency is medium-thick.
  • Add ¼ cup of water, mix it well, and cover the lid.
  • Cook until three whistles.
  • Once the air is released naturally, open the pressure cooker. The potatoes have cooked well.
  • Add steamed drumsticks and mix them well. Cover and simmer for 2 to 4 minutes.
  • After 4 minutes, the gravy consistency is thick. Perfect to have it with chapati or paratha. You may adjust the gravy consistency as you wish.
    Tip* – The gravy will slightly thicken once cooled.
  • Add fresh coriander and serve it hot.
  • Enjoy it with hot chapati, roti, paratha, or rice.
