In India, you can find two types of parathas. Parathas are either fried or toasted. I remember the summer days staying in India when I used to travel with a couple of my friends to Delhi to visit the famous paranthe wali galli or locally known as “khau galli” in Chandni Chowk to try out different fried parathas on the streets. Delhi is typically known for its deep-fry paratha.

I haven’t seen any other place in India with that many varieties of parathas compared to Delhi. You can get all sorts of stuffings in Delhi, from traditional spicy fillings like potato, paneer, peas, onion, and cauliflower to sweet fillings like mewa, rabri, banana, etc. I personally like Babu Ram Parantha in Delhi. Today, countless vendors serve better parathas than Babu Ram or Kannaiylal Durga in Chandni Chowk, Delhi.

When you move out of Delhi, you will find street vendors toasting paratha in ghee instead of frying them. These are the best and most healthy parathas, as they are less oily and maintain the same crispiness as fried parathas in Delhi.

After trying different variations, I have noticed that when you add sandwich masala to the filling, the cheese paratha tastes even better. So, in my version, I have added sandwich masala and black pepper to the mix. Chat masala also works fine for this cheese paratha if you want to replace it with a sandwich masala.

These cheese parathas are easy and quick to make in just 15 minutes. Mix cheese, onions, and spices and keep aside. Knead the dough and make the parathas and serve them immediately. These cheese parathas taste delicious when served hot.

  • 1 Onion chopped
  • 2 Green Chilies
  • Fresh Coriander
  • 1 tsp Sandwich Masala

  • Add 250 grams of grated cheese, one chopped onion, two green chilies chopped, some fresh coriander, 1 tsp sandwich masala, 1 tsp black powder, and salt in a mixing bowl.
  • Mix all the ingredients well.
  • Add 2 cups wheat flour and salt as per taste in another mixing bowl.
  • Mix it well and knead a semi-soft dough.
  • Add 1 tbsp oil and knead the dough well.
  • Cover and rest the dough for 10 minutes.
  • After 10 minutes, knead the dough once again. Take a small portion of the dough and form a ball.
  • Coat it in wheat flour and roll it into a small thick chapati.
  • Apply little oil to the dough. Take a spoonful of prepared cheese mixture and place it in the center.
  • Bring all the ends of the dough to the center. Seal and gently flatten it.
  • Dust some wheat flour and gently roll it into a slightly thick paratha.
  • On a hot tawa, place the rolled paratha, and cook for a minute.
  • Flip the paratha when the base is cooked (after a minute) and press slightly.
  • Apply ghee and flip the paratha. Apply ghee on the other side and press slightly. Flip the paratha once or twice till both sides are cooked properly.
