How to Make Aloo Gobi Ki Sabji without Onion and Garlic

- 3 green chili, ½ inch ginger, fresh coriander
- 600 Grams Cauliflower
- 2 Potatoes
- 3 Tomatoes
- ¼ cup Frozen Peas
- 4 tbsp Oil
- ¼ tsp Asafoetida
- ¼ tsp Turmeric Powder
- ¾ tbsp Coriander Cumin Powder
- ½ tbsp Red Chilli Powder
- ¼ tsp Garam Masala
- 1 tsp Sugar
- Salt as per taste
- Fresh Coriander

- First, prepare the green masala. Take three green chili, ½ inch ginger, some fresh coriander, grind into a paste, and keep it aside.
- Take 600 grams of cauliflower. Cut them into medium-sized florets, wash them thoroughly with clean water, and keep them aside.
- Add 2 tbsp of oil in a large pan and let the oil heat up. Once the oil is hot, add ¼ tsp of asafoetida and saute it.
- Add chopped cauliflower. Stir occasionally and roast on low to medium flame until cauliflower turns golden.
- Once the cauliflower turns golden in color, add two potatoes cut into wedges shape.
- Stir occasionally and cook for 5 minutes on a medium flame.
- After five minutes, add three chopped tomatoes and ¼ cup of frozen peas and mix all the ingredients well.
- Stir occasionally and cook until the tomatoes turn soft and mushy.
- Add all the spices – prepared green masala paste, ¼ tsp of turmeric powder, ¾ tbsp of coriander-cumin powder, ½ tbsp of red chili powder, ¼ tsp of garam masala, 1 tsp of sugar, salt as per taste, and 2 tbsp of oil. Mix all the ingredients well.
- You can prepare this dish either dry or in a semi-liquid gravy. Add one cup of water to the pan and cook on a medium flame until the potatoes are soft and well-cooked for a semi-liquid consistency.
