- 600 grams Cabbage
- 2 Potato
- 3 Tomatoes
- 3 tbsp Oil
- ½ tsp Mustard Seeds
- ½ tsp Cumin Seeds
- ½ tsp Fenugreek Seeds
- ¼ tsp Asafoetida
- 2 to 3 Green Chilies
- 1 inch Ginger finely chopped
- ¼ tsp Turmeric Powder
- ½ tbsp Red Chili Powder
- ¾ tbsp Coriander Powder
- Salt as per taste
- 1 tsp Sugar
- Fresh Coriander

- Start by removing all the loose leaves from the cabbage.
- Cut the cabbage into halves. The weight of the cabbage is 600 grams.
- Chop it finely.
- Discard the stem.
- Soak the chopped cabbage in the water and keep it aside.
- In a pan, add 3 tbsp of oil and heat it. Once the oil is hot, add ½ tsp of mustard seeds and let them crackle.
- Next, add ½ tsp cumin seeds, ½ tsp fenugreek seeds, ¼ tsp of asafoetida, and saute until it turns aromatic.
- Now add the chopped cabbage and mix well.
- Add 1 tsp of sugar and mix well again.
- Stir occasionally and roast the cabbage on a low to medium flame till light golden.
