Ingredients

  • 3 Boiled Potatoes 
  • 2 tbsp Oil
  • ½ tsp Mustard Seeds
  • ½ tsp Cumin Seeds
  • ¼ tsp Asafoetida
  • 2 to 3 Green Chilies
  • 1 inch Ginger chopped
  • few Curry Leaves
  • ¼ tsp Turmeric Powder 
  • Salt as per taste
  • Fresh Coriander
  • Half Lemon Juice
  • 1 cup Wheat Flour
  • 1 tsp Oil

Instructions

  • Add 1 cup of wheat flour, salt as per taste, and 1 tsp of oil in a mixing bowl.
  • Mix all the ingredients until well combined.
  • Add water in batches and knead a stiff dough.
  • Add a little oil and knead the dough again until it becomes smooth.
  • Cover the dough and give a 5-minute rest.
  • Add 3 tbsp of oil to a pan and let the oil heat up. Once the oil is hot, add ½ tsp of mustard seeds.
  • Once the mustard seeds crackle, add ½ tsp of cumin seeds, ¼ tsp of asafoetida, 2 to 3 chopped green chilies, one inch chopped ginger, a few curry leaves, ¼ tsp of turmeric powder, and saute for a few seconds.
  • Add three boiled potatoes cut into cubes, salt as per taste, half lemon juice, some fresh coriander leaves, and mix.
  • Cover with a lid and simmer on a low flame for a minute.
  • After one minute, the aloo bhaji is ready.
  • The dough has rested for 5 minutes. Pinch and make small balls of the dough.
  • Using a rolling pin, roll it into a slightly thick round shape. Make the remaining puris in the same way.
  • Add a small piece of dough to the oil to check the temperature. If it sizzles up quickly, indicating that the oil is perfect for frying. The oil should be hot.
    Tip*- If the temperature is medium, the puris may turn oily. If the temperature is too hot, the puri will turn golden quickly.
  • Gently transfer the puri into a hot oil and let it fry for a second.
  • Press gently with the spatula to puff up the puri.
  • Flip over the puri to the other side.
  • Fry till golden.
  • Remove the puri from the oil.  Similarly, fry the remaining puris.
  • Serve hot puris with bhaji along with fried green chiles and masala chai.
  • Enjoy this puri bhaji any time of the day.
