- 1 cup or 150 grams Cashew Nuts
- 2 tsp Milk Powder
- 75 grams Sugar
- ½ cup Water
- 8 to 10 Cashew nuts cut in halves
- ½ tsp Rose Emulsion
- 10 to 15 Fresh Rose Petals
- 2 tbsp Dry Rose Petals
- 1½ tbsp Clarified Butter (ghee)
Instructions
- Take 1 cup or 150 grams of cashew nuts. Add a few in a small grinding jar.Tip*- Do not take a big grinding jar.
- Grind them in the pulse. Turn the button ON, and after a second, turn it OFF. Wait for two seconds and again turn the button ON, and after a second, turn it OFF. This step is primary in making a perfect katli. Tip*- Grinding all the cashews at once will make the cashew powder sticky and release oil, which will not taste good while eating.
- The cashew powder should be smooth and non-sticky.
- Sift the cashew powder. Grind any leftover coarse mixture and sift it.
- Add 2 tsp of milk powder and mix all the ingredients well.Tip*- Do not use creamer.
- Heat ½ tbsp of clarified butter (ghee) in a pan. Add 8 to 10 cashew nuts (halves) and roast on a low flame until light golden. Transfer to a bowl and keep it aside.
- Add 10 to 15 fresh rose flowers in the same pan and roast on a low flame for a few seconds. Transfer to a bowl and keep it aside.
- Add 75 grams of sugar and ½ cup of water in a pan. Keep stirring until the sugar dissolves in the water. Let the water come to a boil.

- Turn the gas flame off. Add the cashew nut prepared mixture, roasted fresh rose petals, ½ tsp of rose emulsion, one tbsp of clarified butter (ghee) and mix all the ingredients.
- Turn the gas flame ON. The mixture is sticky. Cook on a low to medium flame until the mixture leaves the sides of the pan. If required, add ½ tbsp of clarified butter(ghee).
- After 5 to 10 minutes, the mixture will start leaving the sides of the pan. Take some mixture and roll it to form a ball. The mixture is perfect and ready if it is non-sticky and a ball is formed.
- The mixture will have a good shine.
- Place the mixture over a greased plate. Wait for a few minutes. When the mixture is slightly hot, knead well with your hands to smoothen it.
- Roll the mixture gently with the rolling pin. Place the roasted cashew nuts and 1 tbsp of dry rose petals over the mixture.
- Roll the mixture into ½ inch thickness. Cool it for 4 to 5 hours, or keep it overnight.
- Cut them in the katli shape.
