  • 1 cup Processed Cheese
  • 1 cup Mozzarella Cheese
  • 1 to 2 Green Chilies
  • 3 tbsp Olives 
  • 3 tbsp Onion
  • 2 tbsp Fresh Coriander
  • Black Pepper Powder as per taste
  • 2 tbsp Fine Flour or All purpose flour
  • Little Salt
  • ½ tsp Chili Flakes Optional
  • Oil for frying

Instructions

  • Add 1 cup of processed cheese, 1 cup of mozzarella cheese, 3 tbsp of finely chopped onion, 3 tbsp of olives (cut in halves), 1 to 2 green chilies, 2 tbsp of fresh coriander, black pepper powder as per taste, a little salt, and ½ tsp of chili flakes (optional) in a large mixing bowl.
    Tip*- You can always add corn, capsicum, or any other veggies of your choice. Be careful with salt; cheese contains salt.
  • Mix all the ingredients and keep it aside.
  • Add 2 tbsp of white flour or all-purpose flour in a small bowl. Add water in batches and prepare a medium-thick paste. Keep it aside.
  • To make the samosa, take the patti sheet readily available in the market. (Switz brand or any brand).
  • Take one samosa patti sheet.
  • Cover the remaining sheets with a damp cloth.
  • Apply paste to the right side of the sheet. 
  • Take the left corner of the sheet, fold it tightly to form a triangle, and seal it firmly.
  • Apply the paste on the right side above the triangle.
  • Now, fold the right side tightly to form another triangle and seal it firmly. 
  • Apply the paste on the left side of the sheet.
  • Fold the sheet to form a third triangle. Ensure all the folds are tightly secured.
  • Hold the sheet in your hand and open the first pocket.
  • Add 1½ tbsp of filling and press the filling down gently. Place it down on the surface.
  • Apply the paste to the remaining sheet.
  • Tightly fold to the left side to form the triangle.
  • And fold the final remaining sheet over the triangle.
  • Fold the excess sheet over the triangle or cut it with scissors.
  • Seal all three edges with the paste.
    Tip*- This will prevent the cheese from spreading while frying the samosa.
  • Store in an air-tight container and freeze them. Stays fresh for a week. Fry them anytime.
  • Transfer some prepared samosa to a medium hot oil. Let the samosa fry. Do not flip immediately to the other side.
    Tip*- The gas flame should be medium or high.
  • Gently flip and fry until golden.
  • Do not over-fry the samosa. There are chances the melted cheese may spread out of the sheet. It takes only a few minutes to fry them.
    Tip*- While frying, if you hear a sizzling sound, immediately remove the samosa from the oil. It indicates the cheese is going to spread out.
